The Wedding Cake Recipe requires a lot of time in its baking process. But one can’t imagine a wedding without the wedding cake in it. There are lot of people who opt for making the cake all by themselves, displaying their culinary skills and talents. My friend Nicole helped me in making a wedding cake. It was just an experiment which was done by me, thinking what if someday, we were to make a huge wedding cake, so then thought, no big deal; let’s give it a try. It was a beautifully decorated white cake with raspberry filling. The final product was beyond our expectation. I took my friend’s help because, I didn’t want anything to go wrong, and as it was the first time I was baking such a huge cake. It was a beautiful soft and moist Whitish color cake, with beautiful edible flowers on it and the inner part was hidden by the thick white creamy frosting. Since it turned out to be a success, I and Nicole divided the cake into two portions, one was for her family and the other half was kept by me. It was delicious and we both got lot of praises, from our family and friends. So whenever you want to bake a wedding cake make sure you have all the ingredients intact.

Ingredients needed for preparing the Wedding Cake:

  • Super moist white cake mix – 8 Boxes.
  • Water – 10 Cups.
  • Vegetable oil – 2 ¾ Cups.
  • Egg whites – 24.

Ingredients needed for frosting the Wedding Cake:

  • Powdered sugar – 32 Cups.
  • Meringue powder – 4 tablespoons.
  • Shortening – 4 Cups.
  • Milk- 2 Cups.
  • Vanilla extract – 8 teaspoons.
  • Almond extract – 4 teaspoons.
  • Decorating bags – 1 pack.
  • Royal icing flowers – readymade – 15-20 pieces.
  • Cardboard for the cake – few thick sheets.
  • Wooden dowels – 1- 8 rods to support the cake structure.

Filling for the Wedding Cake:

  • Raspberry Filling – 1 ¾ Cups.

 

Method:

  • Set the oven at 325 degrees F and then grease the bottoms as well as the sides of each square shaped cake pans with shortening.
  • Once you have done this now coat the pans with flour and then tap them slightly, in order to remove the extra flour from the pans.
  • Now you can put the greased pans aside.
  • Now the next step is to make the batter for the 6 as well as the 8 inch pans.
  • For this you have to take a large sized bowl and beat at least 2 boxes of cake mix, along with 2 ½ Cups of water, 2/3 Cup of oil and then add 6 egg whites to this batter and then mix up all the ingredients with help of an electric mixer at a low pace for at least 30 seconds or so. When you have done this, now again mix it for 2 minutes at a medium pace and make sure you scrape the bowl occasionally.

  • Make sure you cover the remaining batter with a tight plastic wrap and then refrigerate it.
  • Now bake both the cake pans in the cake oven.
  • Bake the 6 inch pan for at least 40 to 45 minutes or so and bake the 8 inch pan for at least 45 to 50 minutes or so.
  • You can come to know that the cakes are almost done with the process of baking, when you see the beautiful color of the cake and get the sweet aroma of the cakes, which indicates it’s ready.
  • Let the cakes cool in the pans for at least 15 minutes or so.
  • Once they have cooled down a bit, now remove these cakes from their pans and let place them on the wired rack of the cake oven and leave them to cool down completely for at least 1 hour or so.
  • The next step is to prepare fresh cake batter once again, for this you have to take a take a square shaped cake pan which measures 12 inch.
  • Now you have to grease and flour this cake pan, and keep it aside. In mean time you can prepare the fresh cake batter.
  • Take a large sized bowl and add two boxes of cake mix, along with 2 ½ Cups of water, 2/3 cup of oil as well as 6 egg whites in it and then mix up all the ingredients with help of an electric mixer at a low pace for 30 seconds or so and then mix it at a medium speed for at least 2minutes and make sure you keep scraping the bowl side by side.
  • Now add this batter to the batter which you had kept aside in the refrigerator and stir it up nicely so that it mixes up properly.
  • Now spread at least 9 cups of batter evenly in the 12 inch cake pan.
  • Bake the 12 inch cake pan for at least 50 to 60 minutes or so.
  • You can then see the cake is almost done with the process of baking, when you get the sweet aroma of the freshly baked cake.
  • Now let the cake cool down on the wired rack of the oven for 25 minutes or so.
  • Once it has cooled down completely now remove it from the pan and place it on the oven rack, cool it for at least 1 hour or so.
  • The wedding cakes are made up in tiers; even my cake is made in the similar manner and each tier is usually made up of 2 layers of the cake.
  • But I guess I need to make another layer of 6 and 8 inch for that, wash and then dry both the cake pans.
  • One has to follow all the steps once again to bake the cake batter in the similar manner. Which can be a tedious process but, if you want the Wedding cake according to your expectations then you have to work hard for the perfect presentation.
  • Now wash and dry the 12 inch cake pan, once again and prepare the pan and bake the second layer, in the same way like you baked the rest of them.
  • Now let both the cake pans cool down completely.
  • In mean time you can now prepare the frosting for this huge mouthwatering Wedding cake.

Method for preparing the frosting for the Wedding cake:

In order to make the frosting for the White Raspberry Wedding cake you need to go through the following steps:

  •  First of all you have to take a large sized bowl and add 8 cups of powdered sugar in it, along with 1 tablespoon of the meringue powder.
  • Now stir up both the ingredients nicely with help of an electric mixer and make sure you mix it in a low pace and then beat in 1 cup of shortening, ½ cup of milk. 2 teaspoons of vanilla extract as well as 1 teaspoon of almond extract.
  • Once you have added all the ingredients now beat them on a medium pace until you see it has all mixed up properly and it has become smooth enough.
  • Now add the remaining milk to it, but it should be not more than 1 tablespoon at a time.

  • The Wedding cake looks beautiful when it stacked up neatly, on one top of the other and it is tastefully decorated with white – yellowish flowers.

How to store the Wedding Cake?

  • The best way to store such a cake is to refrigerate it, to be on the safe side.
  • It can be stored in an air tight container and before that wrap it up in a plastic wrap and then store it and make sure you don’t break the cake.
  • The cake container should be big enough and fit all the cakes in 3 different containers according to their sizes.
  • Keep the cake in the refrigerator for 12 hours before assembling it.
  • However it is always advisable to consume it as soon as possible.

Cake Ingredients:

  • Egg yolks – 3.
  • Sweetened condensed milk – 1/3 Cup.
  • Coconut milk – 1/3 Cup.

Method:

  • Set the oven at 350 degrees F for baking the cake.
  • Now peel and then grate a cassava root and then measure out ½ lb from the grated root.
  • Take the grated cassava root in a medium sized bowl and add ½ cup of milk to it and 1 teaspoon of vanilla extract to it. Once you have done that now add a beaten egg to the cassava and mix it up with a wooden spoon and let the mixture stand for at least 5 minutes or so.
